🥔🍗 Chicken Potato Rolls

Ingredients (Makes 10–12 rolls)

For the Potato Dough:

  • 4 medium potatoes (boiled & mashed)

  • 1 egg

  • 2 tbsp cornflour (or all-purpose flour)

  • ½ tsp black pepper

  • ½ tsp salt

  • ½ tsp chili flakes (optional)

For the Chicken Filling:

  • 1 cup chicken breast (boiled & shredded or cooked & minced)

  • 1 small onion (finely chopped)

  • 1 green chili (chopped, optional)

  • 1 tbsp oil

  • ½ tsp ginger-garlic paste

  • ½ tsp turmeric

  • ½ tsp cumin powder

  • ½ tsp coriander powder

  • ½ tsp chili powder or paprika

  • Salt to taste

  • 2 tbsp fresh coriander or parsley (chopped)

For Coating & Frying:

  • 1 egg (beaten)

  • 1 cup breadcrumbs

  • Oil for deep frying


Directions

Step 1: Prepare the Filling

  1. Heat 1 tbsp oil in a pan.

  2. Sauté onion until soft, then add ginger-garlic paste.

  3. Add shredded chicken, spices, salt, and cook for 2–3 minutes.

  4. Mix in coriander/parsley. Let it cool.


Step 2: Make the Potato Dough

  1. In a bowl, mash boiled potatoes until smooth.

  2. Add egg, cornflour, salt, and pepper. Mix into a soft dough.


Step 3: Shape the Rolls

  1. Grease your hands lightly with oil.

  2. Take a portion of potato dough, flatten in your palm.

  3. Place 1–2 tsp chicken filling in the center.

  4. Roll carefully into a cylindrical roll shape (like a croquette).

  5. Repeat until all rolls are formed.


Step 4: Coat the Rolls

  1. Dip each roll in beaten egg.

  2. Roll in breadcrumbs until fully coated.

  3. (Optional: For extra crunch, repeat egg + breadcrumb coating twice.)


Step 5: Fry the Rolls

  1. Heat oil in a deep pan to 350°F (175°C).

  2. Fry rolls in small batches for 3–4 minutes, until golden brown and crispy.

  3. Remove and drain on paper towels.


Step 6: Serve

  • Serve hot with ketchup, garlic mayo, or green chutney.

  • Garnish with chopped coriander or chili flakes if desired.


🌟 Tips & Variations

  • For cheesy potato rolls → add mozzarella sticks inside with the chicken filling.

  • You can also bake or air fry at 400°F (200°C) for 15–18 minutes (brush with oil).

  • Make ahead: Shape rolls, coat with breadcrumbs, and freeze. Fry directly from frozen (add 1–2 minutes).
