  • Gram flour (besan) – ½ cup

  • Rice flour or cornflour – 2 tablespoons (for crispiness)

  • Cumin seeds – ½ teaspoon

  • Red chili powder – ½ teaspoon

  • Turmeric powder – ¼ teaspoon

  • Salt – to taste

  • Water – 2–4 tablespoons (as needed)

  • Oil – for shallow or deep frying


👩‍🍳 Step-by-Step Directions


Step 1: Prepare the Cabbage

  1. Wash cabbage and shred finely.

  2. Sprinkle a little salt and gently squeeze.

  3. Let sit 5 minutes, then squeeze out excess water.


Step 2: Make the Batter

  1. In a bowl, add cabbage, onion, chilies, garlic, and coriander.

  2. Add besan, rice flour, cumin seeds, red chili powder, turmeric, and salt.

  3. Mix well.

  4. Add water slowly to form a thick batter that holds shape.


Step 3: Heat Oil

  1. Heat oil in a pan over medium heat.

  2. Oil should be hot but not smoking.


Step 4: Fry the Fritters

  1. Drop spoonfuls of batter into hot oil.

  2. Flatten slightly.

  3. Fry 2–3 minutes per side until golden brown and crisp.

  4. Remove and drain on paper towels.
