🍰 Healthy & Moist Sugar-Free Cake

🧾 Ingredients

  • Whole wheat flour – 1½ cups (180 g)

  • Baking powder – 1½ teaspoons

  • Baking soda – ½ teaspoon

  • Salt – ¼ teaspoon

  • Unsweetened applesauce – ½ cup (acts as natural sweetener and moisture)

  • Ripe bananas – 2 medium, mashed

  • Eggs – 2 large

  • Greek yogurt – ½ cup

  • Milk (dairy or plant-based) – ½ cup

  • Coconut oil or olive oil – ¼ cup, melted

  • Vanilla extract – 1 teaspoon

  • Optional add-ins: cinnamon (1 teaspoon), nuts (¼ cup), or sugar-free chocolate chips (¼ cup)


👩‍🍳 Step-by-Step Directions


Step 1: Preheat Oven & Prepare Pan

  1. Preheat oven to 175°C (350°F).

  2. Grease an 8×8-inch baking pan or line with parchment paper.


Step 2: Mix Dry Ingredients

  1. In a bowl, combine flour, baking powder, baking soda, salt, and optional cinnamon.

  2. Whisk together to distribute evenly.


Step 3: Mix Wet Ingredients

  1. In a separate bowl, mash bananas and mix with applesauce.

  2. Add eggs, Greek yogurt, milk, melted coconut oil, and vanilla extract.

  3. Stir until smooth and combined.


Step 4: Combine Wet and Dry

  1. Pour wet mixture into dry ingredients.

  2. Fold gently until just combined – do not overmix.

  3. Add optional nuts or chocolate chips.


Step 5: Bake

  1. Pour batter into prepared pan and smooth the top.

  2. Bake for 30–35 minutes, or until a toothpick inserted comes out clean.

  3. Let cake cool in pan for 10 minutes, then transfer to a wire rack.


Step 6: Serve

  • Slice and enjoy warm or at room temperature.
