Here’s a simple and delicious Cheesy Chips recipe—a perfect snack or side dish.

Ingredients

  • 4 large potatoes, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika (optional)
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • 2 tbsp chopped green onions (optional, for garnish)

Directions

Step 1: Prepare Potatoes

  • Preheat oven to 425°F (220°C).
  • Wash and thinly slice potatoes. Pat dry to remove excess moisture.

Step 2: Season

  • Toss potato slices with olive oil, salt, pepper, and paprika.

Step 3: Bake

  • Arrange slices in a single layer on a baking sheet lined with parchment paper.
  • Bake for 20–25 minutes, flipping halfway, until golden and crispy.

Step 4: Add Cheese

  • Remove chips from oven and sprinkle shredded cheese evenly on top.
  • Return to oven for 3–5 minutes until cheese melts and bubbles.

Step 5: Serve

  • Garnish with chopped green onions if desired.
  • Serve hot with ketchup, ranch, or your favorite dip.

Tips

  • Use russet potatoes for the crispiest chips.
  • Slice potatoes evenly for uniform cooking.
  • Soak sliced potatoes in cold water for 20 minutes before baking to remove excess starch and make them extra crispy.
  • Can use air fryer: 400°F for 15–20 minutes, add cheese at the end.

Variations

  • Spicy Cheesy Chips: Add chili powder or paprika to seasoning
  • Loaded Cheesy Chips: Top with cooked bacon bits or sautéed onions
  • Cheesy Herb Chips: Sprinkle with garlic powder and dried herbs
