Creamy Flavorful Chicken Spaghetti

This creamy chicken spaghetti is smooth, savory, and packed with tender chicken in a garlic-cream sauce. Perfect for lunch, dinner, or special gatherings.
Ingredients (Serves 4–5)
For the Pasta
- 400 g spaghetti
- Water + salt (for boiling)
For the Chicken
- 2 cups boneless chicken breast, thinly sliced
- 1 tbsp oil
- 1 tbsp butter
- 1 tsp garlic paste (or 3 cloves minced)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp Italian seasoning
- ½ tsp chili flakes (optional)
For the Creamy Sauce
- 2 tbsp butter
- 1 tbsp all-purpose flour
- 1½ cups milk
- ½ cup cooking cream or fresh cream
- ½ cup mozzarella cheese, grated
- ¼ cup cheddar or parmesan cheese
- Salt & pepper to taste
Optional Add-Ins
- ½ cup mushrooms or bell peppers
- Fresh parsley or coriander for garnish
Directions
Step 1: Cook the Spaghetti
- Boil spaghetti in salted water according to package instructions until al dente.
- Drain and set aside. Reserve ½ cup pasta water.
Step 2: Cook the Chicken
- Heat oil and butter in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add chicken, salt, pepper, paprika, Italian seasoning, and chili flakes.
- Cook for 6–8 minutes until chicken is fully cooked and lightly golden.
- Remove chicken from pan and set aside.
Step 3: Make the Creamy Sauce
- In the same pan, add butter and melt.
- Add flour and cook for 1 minute, stirring constantly.
- Slowly add milk while whisking to avoid lumps.
- Cook until sauce thickens slightly.
- Add cream, salt, and pepper. Mix well.
- Stir in mozzarella and cheddar/parmesan until melted and smooth.
Step 4: Combine Everything
- Add cooked chicken back into the sauce.
- Add spaghetti and toss gently to coat evenly.
- If needed, add reserved pasta water to adjust consistency.
- Cook together for 2–3 minutes on low heat.
Step 5: Serve
- Garnish with fresh herbs and extra cheese.
- Serve hot with garlic bread or salad.
Tips for Extra Flavor
- Use parmesan cheese for a deeper taste.
- Add a splash of chicken broth for restaurant-style flavor.
- Cook on low heat after adding cheese to avoid splitting.

- Spicy: Add green chilies or hot sauce
- Veggie: Add mushrooms, spinach, or sweet corn
- Baked version: Transfer to a dish, top with cheese, bake at 180°C for 10 minutes
