🥧 Lazy Girl Pecan Pie Bars

Ingredients

For the Crust:

  • 1 cup unsalted butter (softened)

  • 2 cups all-purpose flour

  • ½ cup powdered sugar

  • ¼ tsp salt

For the Filling:

  • 3 large eggs

  • 1 cup light corn syrup (or golden syrup)

  • 1 cup brown sugar (light or dark)

  • 2 tbsp unsalted butter (melted)

  • 1 tsp vanilla extract

  • 2 ½ cups pecans (chopped or halves)

  • Pinch of salt


Directions

Step 1: Prepare the Crust

  1. Preheat oven to 350°F (175°C).

  2. Line a 9×13-inch baking pan with parchment paper (leave overhang for easy removal).

  3. In a bowl, mix softened butter, flour, powdered sugar, and salt until crumbly.

  4. Press evenly into the bottom of the prepared pan.

  5. Bake for 15–18 minutes until lightly golden. Remove from oven but keep oven on.


Step 2: Make the Pecan Filling

  1. In a mixing bowl, whisk together eggs, corn syrup, brown sugar, melted butter, vanilla, and salt.

  2. Stir in pecans until coated.


Step 3: Bake the Bars

  1. Pour filling evenly over the warm crust.

  2. Bake for 30–35 minutes, or until the center is set (not jiggly).

  3. Remove from oven and let cool completely in the pan.


Step 4: Slice & Serve

  • Once cooled, lift bars out with parchment and cut into squares or rectangles.

  • Store at room temperature up to 3 days or refrigerate for a week.

  • For extra crunch: Toast pecans lightly before adding to filling.

  • For gooier bars: Bake 5 minutes less.

  • Add a splash of bourbon or rum to the filling for a Southern twist.

  • Drizzle with melted chocolate or caramel after cooling for a decadent upgrade.
