Baked cottage cheese eggs

Baked Cottage Cheese Eggs are a nutritious, high-protein breakfast or snack. Creamy cottage cheese combines with eggs, herbs, and optional vegetables, baked until golden and fluffy. They’re easy to prepare, low-carb, and perfect for meal prep.


Ingredients (Serves 2–3)

  • 4 large eggs

  • ½ cup cottage cheese (paneer can be used as alternative)

  • 2 tablespoons milk or cream

  • ¼ teaspoon salt (adjust to taste)

  • ¼ teaspoon black pepper

  • ½ teaspoon dried herbs (oregano, thyme, or parsley)

  • Optional vegetables: chopped spinach, tomatoes, bell peppers

  • Optional toppings: shredded cheese, fresh herbs


Instructions

1. Preheat Oven

  • Preheat oven to 180°C (350°F).

  • Grease a small baking dish or muffin tin with butter or oil.

2. Prepare the Egg Mixture

  1. In a mixing bowl, whisk together eggs, milk, salt, pepper, and dried herbs.

  2. Fold in cottage cheese until evenly distributed.

  3. Add optional vegetables if using.


3. Bake

  1. Pour the mixture into the greased baking dish or divide into muffin cups.

  2. Bake for 20–25 minutes (15–20 minutes for muffins) or until the eggs are set and lightly golden on top.

  3. Check doneness by inserting a toothpick—it should come out clean.


4. Serve

  • Serve warm with whole-grain toast, salad, or avocado.

  • Garnish with fresh herbs or a sprinkle of shredded cheese if desired.


Tips for Perfect Baked Cottage Cheese Eggs

  • Use full-fat cottage cheese for creamier texture.

  • Do not overbake; eggs continue cooking slightly after removal.

  • Muffin tin portions are great for meal prep and freezing.

  • Add spices like paprika or chili flakes for extra flavor.
