Easy French Onion Soup

French Onion Soup is a warm, savory, and comforting soup with caramelized onions, rich broth, and a cheesy toasted topping. This easy version simplifies the process but keeps the deep, sweet flavor of traditional French onion soup.


Ingredients (Serves 4)

  • 4 large onions, thinly sliced

  • 3 tablespoons butter

  • 1 tablespoon olive oil

  • 1 teaspoon sugar (helps caramelize onions)

  • 3 cloves garlic, minced

  • 4 cups beef or vegetable broth

  • 1 teaspoon Worcestershire sauce (optional)

  • Salt and pepper, to taste

  • 4 slices of baguette or crusty bread

  • 1 cup grated Gruyère or Swiss cheese


Instructions

1. Caramelize the Onions

  1. In a large pot, melt butter with olive oil over medium heat.

  2. Add sliced onions and sugar.

  3. Cook slowly for 20–25 minutes, stirring occasionally, until onions are deep golden brown and sweet.

  4. Add minced garlic in the last 2 minutes of cooking.


2. Make the Soup

  1. Pour in the broth and Worcestershire sauce (if using).

  2. Stir well and bring to a gentle simmer.

  3. Season with salt and pepper to taste.

  4. Let simmer for 10–15 minutes to develop flavor.


3. Prepare the Bread Topping

  1. Preheat oven to 375°F (190°C).

  2. Place baguette slices on a baking sheet and toast lightly until slightly crisp.

  3. Spoon soup into oven-safe bowls, place a slice of bread on top, and sprinkle with grated cheese.


4. Broil & Serve

  1. Place bowls under the broiler for 2–4 minutes, until cheese is melted and bubbly.

  2. Serve immediately—caution, bowls will be hot!


Tips for Best French Onion Soup

  • Use yellow or sweet onions for best caramelization.

  • Cook onions slowly; don’t rush the caramelization process.

  • Gruyère cheese melts beautifully and adds authentic flavor.

  • For vegetarian version, use vegetable broth instead of beef broth.


Variations

  • Sherry or White Wine: Add ¼ cup for extra depth.

  • Herbs: Thyme or bay leaves enhance flavor during simmering.

  • Mini Soup Bowls: Make individual servings for parties or brunch.
