Dry Ingredients

  • 2½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

Wet Ingredients

  • 1 cup unsalted butter, softened

  • 2 cups sugar

  • 4 large eggs, room temperature

  • 1 tsp vanilla extract

  • 1 cup sour cream or buttermilk

  • 1 cup shredded coconut (optional, classic flavor)

  • ½ cup chopped pecans or walnuts (optional)

Step 1: Prep

  1. Preheat oven to 175°C (350°F).

  2. Grease and flour a 9×5-inch loaf pan, or line with parchment paper.


Step 2: Mix Dry Ingredients

  1. In a bowl, whisk together flour, baking powder, baking soda, and salt.

  2. Set aside.


Step 3: Cream Butter & Sugar

  1. In a large bowl, beat softened butter and sugar until light and fluffy (3–4 minutes).


Step 4: Add Eggs & Vanilla

  1. Beat in eggs one at a time.

  2. Add vanilla and mix well.


Step 5: Combine Wet & Dry Ingredients

  1. Alternately add dry ingredients and sour cream to the butter mixture, starting and ending with dry ingredients.

  2. Fold gently until just combined.


Step 6: Add Coconut & Nuts

  1. Fold in shredded coconut and chopped nuts, if using.


Step 7: Bake

  1. Pour batter into prepared loaf pan.

  2. Bake for 60–70 minutes or until a toothpick inserted comes out clean.

  3. Cover loosely with foil if top browns too quickly.


Step 8: Cool & Serve

  1. Let cake cool in pan for 10 minutes.

  2. Transfer to a wire rack to cool completely.

  3. Slice and serve.
