This Cucumber Bacon Salad is the perfect mix of cool, crisp cucumbers and smoky, crispy bacon tossed in a creamy, tangy dressing. It’s quick, satisfying, and works beautifully as a side for BBQs, lunches, or dinners.


Ingredients

Salad

  • 2 large cucumbers (sliced thin)
  • 6–8 strips bacon (cooked & crumbled)
  • ½ small red onion (thinly sliced)

Creamy Dressing

  • ½ cup mayonnaise
  • 2 tbsp sour cream (or yogurt)
  • 1 tbsp vinegar (white or apple cider)
  • ½ tsp sugar (optional, balances flavor)
  • ½ tsp black pepper
  • Salt to taste

Optional Add-Ins

  • 1 tbsp fresh dill or parsley (chopped)
  • ½ cup shredded cheddar cheese
  • Cherry tomatoes (halved)

Step-by-Step Instructions

1. Prepare the Cucumbers

  • Wash and slice cucumbers thin
  • Optional: lightly sprinkle salt and let sit 10 minutes
  • Pat dry to remove excess water (prevents soggy salad)

2. Cook the Bacon

  • Fry bacon until crispy
