Here’s a moist, buttery Pineapple Pound Cake recipe—rich like a classic pound cake, with sweet pineapple flavor in every bite Perfect for tea time, dessert, or special occasions.

🧾 Ingredients

Dry Ingredients

  • 2½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp salt

Wet Ingredients

  • 1 cup (225 g) unsalted butter, softened

  • 1¾ cups granulated sugar

  • 4 large eggs, room temperature

  • 1 tsp vanilla extract

  • 1 cup crushed pineapple, well drained

  • ¼ cup pineapple juice (from the can)

  • ½ cup sour cream or plain yogurt

Step 1: Prep

  1. Preheat oven to 170°C (340°F).

  2. Grease and flour a 9×5-inch loaf pan, or line with parchment paper.


Step 2: Mix Dry Ingredients

  1. Whisk together flour, baking powder, and salt.

  2. Set aside.


Step 3: Cream Butter & Sugar

  1. Beat butter and sugar together until light and fluffy (3–4 minutes).


Step 4: Add Eggs & Vanilla

  1. Add eggs one at a time, beating well after each.

  2. Mix in vanilla extract.


Step 5: Combine Wet & Dry

  1. Add dry ingredients in two additions, alternating with sour cream/yogurt.

  2. Mix gently until just combined.


Step 6: Add Pineapple

  1. Fold in crushed pineapple and pineapple juice.

  2. Do not overmix.


Step 7: Bake

  1. Pour batter into prepared loaf pan.

  2. Smooth the top.

  3. Bake 65–75 minutes.

  4. Tent loosely with foil if top browns too fast.

  5. Toothpick should come out clean.


Step 8: Cool & Serve

  1. Cool cake in pan for 10 minutes.

  2. Transfer to a wire rack to cool completely.

  3. Slice and serve.
