Garlic Butter Steak Bites with Eggs

Ingredients

For the Steak Bites:

  • 1 lb (450 g) sirloin steak or ribeye, cut into 1-inch cubes

  • Salt and black pepper, to taste

  • 1 teaspoon garlic powder

  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 teaspoon fresh thyme or rosemary (optional)

For the Eggs:

  • 4 large eggs

  • Salt and pepper, to taste

  • 1 teaspoon butter or oil (for frying eggs)


Instructions

Step 1: Prepare the Steak

  1. Pat the steak cubes dry with paper towels (this helps them sear nicely).

  2. Season with salt, pepper, and garlic powder.


Step 2: Cook the Steak Bites

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add the steak cubes in a single layer (don’t overcrowd the pan) and sear for 2–3 minutes per side, until browned and cooked to your liking.

  3. Reduce heat to medium, add butter, minced garlic, and thyme/rosemary.

  4. Toss the steak in the garlic butter for 1–2 minutes until fragrant and fully coated.

  5. Remove from skillet and set aside, keeping warm.


Step 3: Cook the Eggs

  1. In the same skillet, add a teaspoon of butter or oil.

  2. Crack the eggs into the pan and cook sunny-side-up, over-easy, or scrambled, depending on your preference.

  3. Season with salt and pepper.


Step 4: Serve

  1. Plate the steak bites and top or serve alongside the eggs.

  2. Optional: Garnish with chopped parsley or chives.

  3. Enjoy with toast, roasted potatoes, or fresh avocado for a complete meal.


Tips for Best Results

  • Make sure steak cubes are dry before cooking—they sear better and stay juicy.

  • Don’t overcrowd the pan; cook in batches if necessary.

  • Use a high-smoke-point oil like avocado or vegetable oil for better searing.

  • Leftover steak bites can be stored in the fridge for 2–3 days and reheated gently.
