🛒 Ingredients

For the Crust

  • 1 (9-inch) graham cracker crust (store-bought or homemade)

For the Filling

  • 1 can (20 oz) crushed pineapple, well drained
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 tub (8 oz) Cool Whip, thawed
  • 1/2 cup powdered sugar (optional, adjust to taste)
  • 1 tsp vanilla extract

For Garnish (Optional)

  • Pineapple chunks or slices
  • Toasted coconut
  • Maraschino cherries

👩‍🍳 Directions

Step 1: Drain the Pineapple

  • Place crushed pineapple in a strainer.
  • Press firmly with a spoon to remove as much liquid as possible (very important).

Step 2: Make the Pudding Base

  • In a large bowl, whisk pudding mix with cold milk for 2 minutes until thick.
  • Let it sit for 2–3 minutes to fully set.

Step 3: Fold in the Creaminess

  • Gently fold in Cool Whip until smooth.
  • Add powdered sugar and vanilla extract (if using).

Step 4: Add Pineapple

  • Fold in the drained crushed pineapple carefully.

Step 5: Assemble the Pie

  • Spoon the filling into the graham cracker crust.
  • Smooth the top with a spatula.

Step 6: Chill

  • Refrigerate for at least 4 hours (overnight is best).
