Ingredients

For the Pie Crust

All-purpose flour – 2 ½ cups
Salt – ½ teaspoon
Sugar – 1 tablespoon
Cold unsalted butter – 1 cup (cut into small cubes)
Ice-cold water – 6–8 tablespoons


For the Apple Filling

Apples – 5 to 6 medium (Granny Smith or any firm apples)
Sugar – ½ cup
Brown sugar – ¼ cup
Cornstarch – 2 tablespoons
Ground cinnamon – 1 teaspoon
Nutmeg – ¼ teaspoon
Lemon juice – 1 tablespoon
Vanilla extract – 1 teaspoon


For the Creamy Custard

Milk – 1 ½ cups
Egg yolks – 3
Sugar – ¼ cup
Cornstarch – 2 tablespoons
Butter – 1 tablespoon
Vanilla extract – 1 teaspoon


For Brushing (Optional)

Egg – 1
Milk – 1 tablespoon


Step-by-Step Instructions


Step 1: Prepare the Pie Dough

  1. In a large bowl, mix flour, salt, and sugar.

  2. Add cold butter cubes and rub them into the flour using your fingertips until the mixture looks like coarse crumbs.

  3. Add ice-cold water one tablespoon at a time, mixing gently until the dough just comes together.

  4. Divide the dough into two portions, flatten into discs, wrap in plastic, and refrigerate for at least 30 minutes.


Step 2: Prepare the Apple Filling

  1. Peel, core, and slice the apples thinly.

  2. Place apples in a bowl and add sugar, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla extract.

  3. Mix well until apples are evenly coated.

  4. Set aside to allow juices to release.


Step 3: Make the Creamy Custard

  1. In a saucepan, heat milk over medium heat until warm but not boiling.

  2. In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.

  3. Slowly pour warm milk into the egg mixture while whisking continuously.

  4. Return the mixture to the saucepan and cook over low heat, stirring constantly.

  5. Cook until thick and creamy, about 5–7 minutes.

  6. Remove from heat and stir in butter and vanilla extract.

  7. Let the custard cool slightly.


Step 4: Assemble the Pie

  1. Preheat oven to 180°C (350°F).

  2. Roll out one dough disc and place it into a greased 9-inch pie dish.

  3. Spread half of the apple filling evenly over the crust.

  4. Pour the custard over the apples and spread gently.

  5. Add remaining apple filling on top of the custard.

  6. Roll out the second dough disc and place it over the filling. Seal edges and cut small slits on top for steam.


Step 5: Bake the Pie

  1. Whisk egg and milk together and brush over the top crust if desired.

  2. Place the pie on the middle rack of the oven.

  3. Bake for 45–50 minutes until the crust is golden brown and filling is bubbling.

  4. If the edges brown too quickly, cover them loosely with foil.


Step 6: Cool and Serve

  1. Remove the pie from the oven and let it cool for at least 1 hour.

  2. This helps the custard set properly.

  3. Slice and serve warm or chilled.


Serving Suggestions

Serve with vanilla ice cream, whipped cream, or a dusting of powdered sugar.
