🧀🍗 Cheesy Garlic Bacon Ranch Stuffed Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt & pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar or mozzarella cheese
  • 3 cloves garlic, minced
  • ½ cup cooked bacon, chopped (about 6 strips)
  • 2 tbsp ranch dressing (store-bought or homemade)
  • 1 tbsp olive oil
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare chicken: Carefully slice each chicken breast horizontally to create a pocket (don’t cut all the way through).
  3. Make stuffing: In a bowl, mix cream cheese, shredded cheese, minced garlic, chopped bacon, and ranch dressing until well combined.
  4. Stuff chicken: Spoon the cheese mixture into each chicken pocket and press to close. Secure with toothpicks if needed.
  5. Season chicken: Sprinkle salt, pepper, garlic powder, and paprika over the outside of the chicken breasts.
  6. Sear chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  7. Bake: Transfer skillet to the oven and bake for 20-25 minutes, until chicken is cooked through (internal temp 165°F / 74°C).
  8. Rest & serve: Remove toothpicks, garnish with parsley or chives, and enjoy!
