No-Bake Eclair Cake

This No-Bake Éclair Cake is a classic dessert made with layers of biscuits (or graham crackers), creamy vanilla filling, and a smooth chocolate topping. It tastes just like a chocolate éclair—but with no oven needed.


Ingredients

Layers

  • 2 packs plain biscuits (Marie or digestive biscuits)
  • 2 cups cold milk

Cream Filling

  • 2 cups milk
  • 1 pack vanilla instant pudding (or custard powder)
  • 1 cup whipped cream (or fresh cream whipped)
  • ½ cup powdered sugar (adjust to taste)

Chocolate Topping

  • 150g chocolate (dark or milk, chopped)
  • ¾ cup fresh cream

Step-by-Step Instructions

1. Prepare the Cream Filling

  • In a bowl, mix pudding powder with milk
  • Whisk until thick and smooth
  • Fold in whipped cream and powdered sugar
  • Mix gently until creamy

2. Prepare the Base Layer

  • Lightly dip biscuits in milk (don’t soak too long)
  • Arrange a layer in a dish

3. Add Cream Layer

  • Spread a layer of cream filling over biscuits
  • Smooth evenly

4. Repeat Layers

  • Add another biscuit layer
  • Then cream again

Repeat 2–3 layers, finishing with cream on top.


5. Make Chocolate Topping

  • Heat cream until warm (not boiling)
  • Pour over chopped chocolate
  • Let sit 1–2 minutes, then stir until smooth

6. Final Assembly

  • Pour chocolate topping over the top layer
  • Spread evenly

7. Chill (Very Important)

Refrigerate for 6–8 hours or overnight
This allows biscuits to soften and layers to set perfectly.
