🍌 Banana Cake with Cream Cheese Frosting

🍰 Banana Cake

  • Ripe bananas – 3 medium, mashed (about 1¼ cups)

  • All-purpose flour – 2 cups

  • Ground cinnamon – ½ teaspoon (optional)

  • Unsalted butter – ½ cup, softened

  • Granulated sugar – ¾ cup

  • Brown sugar – ¼ cup

  • Eggs – 2 large

  • Vanilla extract – 1 teaspoon

  • Yogurt or sour cream – ½ cup


🧀 Cream Cheese Frosting

  • Cream cheese – 225 g (8 oz), softened

  • Unsalted butter – ¼ cup, softened

  • Powdered sugar – 2½–3 cups (to taste)

  • Vanilla extract – 1 teaspoon

  • Pinch of salt

Step 1: Prepare the Pan

  • Preheat oven to 175°C / 350°F.

  • Grease and line a 9×13-inch pan or 9-inch round pan.


Step 2: Mix Dry Ingredients

  • In a bowl, whisk together:

    • Flour

    • Baking soda

    • Baking powder

    • Salt

    • Cinnamon

  • Set aside.


Step 3: Cream Butter & Sugars

  • Beat butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).

  • Add eggs one at a time, beating well.

  • Mix in vanilla and mashed bananas.


Step 4: Combine Batter

  • Add dry ingredients alternately with yogurt/sour cream.

  • Mix gently until just combined.

  • Do not overmix (keeps cake soft).


Step 5: Bake

  • Pour batter into prepared pan.

  • Bake 35–40 minutes, or until a toothpick comes out clean.

  • Cool completely before frosting.

  1. Beat cream cheese and butter until smooth and creamy.

  2. Add powdered sugar gradually.

  3. Add vanilla and salt.

  4. Beat until fluffy and spreadable.
