Cabbage fritters—also known as cabbage pakoras—are a simple, budget-friendly snack that turns humble cabbage into something crispy, savory, and addictive. They’re perfect with tea or as a quick appetizer.


Ingredients

  • 2 cups finely shredded cabbage
  • 1 small onion (thinly sliced)
  • 1–2 green chilies (finely chopped)
  • 1/2 cup gram flour (besan)
  • 2 tbsp rice flour (for extra crispiness)
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1/2 tsp cumin seeds
  • Salt to taste
  • 2–3 tbsp chopped fresh coriander
  • Water (as needed)
  • Oil for frying

Instructions

1. Prepare the base
In a large bowl, combine cabbage, onion, green chilies, and salt. Mix well and let it sit for 5–10 minutes. This helps release moisture from the cabbage.

2. Make the batter
Add gram flour, rice flour, turmeric, red chili powder, cumin seeds, and coriander. Mix everything together. Add a little water gradually to form a thick batter—don’t make it runny.

3. Heat the oil
Heat oil in a deep pan over medium heat. To test, drop a small bit of batter—if it sizzles and rises, oil is ready.

4. Fry the fritters
Drop small portions of the mixture into the oil using your hands or a spoon. Fry in batches, turning occasionally, until golden brown and crispy.

5. Drain & serve
Remove and place on paper towels to absorb excess oil.


Serving Suggestions

  • Serve hot with mint chutney or tamarind sauce
  • Pair with ketchup or yogurt dip
  • Best enjoyed with a cup of chai

Tips for Perfect Fritters

  • Don’t add too much water—the cabbage releases its own moisture
  • Rice flour is key for crispiness—don’t skip it
  • Fry on medium heat so they cook inside without burning outside
  • Add a pinch of baking soda if you want them extra fluffy
