Cabbage patties

These cabbage patties are crispy on the outside, soft inside, and perfect as a tea-time snack, side dish, or light meal. They are budget-friendly, quick to prepare, and can be pan-fried or shallow-fried.


Ingredients

  • 2 cups cabbage, finely chopped

  • 1 small onion, finely chopped

  • 1 green chili, finely chopped (optional)

  • 1 teaspoon garlic paste

  • ½ teaspoon ginger paste

  • ½ teaspoon red chili powder (adjust to taste)

  • ½ teaspoon turmeric powder

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • Salt to taste

  • 2 tablespoons fresh coriander leaves, chopped

  • 1 egg

  • 3–4 tablespoons gram flour (besan) or all-purpose flour

  • 2 tablespoons breadcrumbs (optional, for extra crispiness)

  • Oil for frying


Instructions

1. Prepare the Cabbage

Wash the cabbage thoroughly and chop it very finely.
Lightly sprinkle with salt and squeeze gently to remove excess water. This step helps make the patties crisp and prevents them from breaking.

2. Mix the Patty Mixture

In a large bowl, combine chopped cabbage, onion, green chili, garlic, ginger, spices, salt, and fresh coriander.
Add the egg, flour, and breadcrumbs. Mix well until everything is evenly combined. The mixture should be soft but firm enough to hold shape.

3. Shape the Patties

Take a small portion of the mixture and shape it into a flat round patty using your hands. Repeat with the remaining mixture.

4. Fry the Patties

Heat oil in a frying pan over medium heat.
Place patties gently into the hot oil.
Fry for 3–4 minutes per side until golden brown and crispy.

5. Drain and Serve

Remove patties and place on paper towels to absorb excess oil.
Serve hot with mint chutney, ketchup, or yogurt dip.


Tips for Perfect Cabbage Patties

  • Chop cabbage very finely for better texture

  • Do not add too much flour; it should bind, not dominate

  • For a healthier version, shallow-fry or air-fry

  • Add grated carrot or boiled potato for variation


Baked / Air Fryer Option

  • Preheat air fryer to 180°C (350°F)

  • Brush patties lightly with oil

  • Air fry for 10–12 minutes, flipping halfway


Serving Suggestions

  • Serve with green chutney and lemon wedges

  • Use as a burger patty inside buns

  • Enjoy with tea or evening snacks
