Here’s a simple and delicious Cheese Scone recipe—soft, fluffy inside with a slightly crisp exterior and rich cheesy flavor. Perfect for breakfast, snacks, or tea time.

Ingredients

  • All-purpose flour – 2 cups

  • Baking powder – 2 teaspoons

  • Salt – ½ teaspoon

  • Unsalted butter – ¼ cup (60 g), cold and cubed

  • Cheddar cheese – 1 cup, grated (or any cheese of your choice)

  • Milk – ¾ cup, plus extra for brushing

  • Optional: Black pepper – ¼ teaspoon or herbs like chives


Directions

Step 1: Preheat the Oven

  • Preheat oven to 200°C (400°F).

  • Line a baking tray with parchment paper.


Step 2: Mix Dry Ingredients

  • In a large bowl, whisk together flour, baking powder, salt, and black pepper/herbs if using.


Step 3: Cut in Butter

  • Add cold cubed butter.

  • Rub in with fingertips or use a pastry cutter until mixture resembles coarse crumbs.


Step 4: Add Cheese

  • Stir in grated cheese evenly.


Step 5: Add Milk

  • Pour in milk gradually.

  • Mix gently until dough comes together. Do not overmix.


Step 6: Shape the Scones

  1. Turn dough onto a floured surface and pat into a 1–1.5 inch thick round.

  2. Cut into 8 wedges or use a round cookie cutter.

  3. Place on prepared tray.

  4. Brush tops lightly with milk for a golden finish.


Step 7: Bake

  • Bake in preheated oven for 15–20 minutes, until risen and golden brown.

  • Cool slightly on a wire rack before serving.


Tips for Best Results

  • Keep butter cold for flaky scones.

  • Handle dough gently; overworking makes scones tough.

  • Use sharp cheddar for stronger flavor.

  • Serve warm with butter or jam.


Variations

  • Herb & Cheese Scones: Add 1–2 tsp dried thyme or rosemary.

  • Spicy Scones: Add ¼ tsp chili flakes or paprika.

  • Mixed Cheese: Use a combination of cheddar, mozzarella, and parmesan.

  • Mini Scones: Reduce size for bite-sized snacks; bake 12–15 minutes.


Storage

  • Store in an airtight container at room temperature for 2 days.

  • Reheat in oven for 5 minutes to refresh.

  • Freeze uncooked dough for 1 month, then bake fresh.
