Cheesecake tarts

Cheesecake tarts are individual desserts with a buttery crust and smooth, creamy cheesecake filling. They’re perfect for parties, brunches, or as a simple sweet treat. You can customize with fruits, chocolate, or caramel toppings.


Ingredients (Makes 6–8 Tarts)

For the Crust

  • 1 cup graham cracker crumbs (or digestive biscuits)

  • 3 tablespoons melted butter

  • 2 tablespoons sugar

For the Cheesecake Filling

  • 8 oz (225 g) cream cheese, softened

  • ¼ cup sugar

  • 1 teaspoon vanilla extract

  • 2 tablespoons sour cream or heavy cream

Optional Toppings

  • Fresh berries (strawberries, blueberries, raspberries)

  • Fruit compote or jam

  • Chocolate ganache or caramel sauce

  • Crushed nuts


Instructions

1. Prepare the Crust

  1. Preheat oven to 350°F (175°C).

  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined.

  3. Press the mixture into 6–8 tart molds or muffin tin cups evenly.

  4. Bake for 8–10 minutes, then let cool completely.


2. Make the Cheesecake Filling

  1. In a bowl, beat cream cheese until smooth and creamy.

  2. Add sugar and vanilla, mixing until well combined.

  3. Stir in sour cream or heavy cream until filling is smooth and silky.


3. Assemble the Tarts

  1. Spoon cheesecake filling into cooled tart shells, filling almost to the top.

  2. Smooth the tops with a spatula or spoon.


4. Chill to Set

  • Refrigerate for 2–3 hours, or until the filling is firm.


5. Add Toppings & Serve

  • Top with fresh berries, fruit compote, chocolate drizzle, caramel, or crushed nuts.

  • Serve chilled for best flavor and texture.


Tips for Perfect Cheesecake Tarts

  • Use room-temperature cream cheese to avoid lumps.

  • Press crust firmly for a sturdy base.

  • For extra richness, fold in a tablespoon of whipped cream into the filling.

  • Store in the refrigerator for up to 3–4 days.


Variations

  • Chocolate Cheesecake Tarts: Mix 2 tablespoons cocoa powder into the filling.

  • Lemon Cheesecake Tarts: Add 1 teaspoon lemon zest and 1 tablespoon lemon juice.

  • Mini No-Bake Tarts: Skip baking crust and press crumbs into molds, then chill with filling.

  • Nutty Crust: Add chopped nuts to the crust mixture for crunch.
