Here’s a rich, creamy Cheesy Baked Asparagus Gratin—simple, elegant, and perfect as a side dish


Cheesy Baked Asparagus Gratin

🧾 Ingredients (Serves 4)

  • 500 g (1 lb) fresh asparagus, trimmed
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1½ cups milk (warm)
  • ½ cup heavy cream (optional, extra richness)
  • 1 cup shredded cheese (Gruyère, cheddar, mozzarella, or a mix)
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp nutmeg (optional)

Optional Topping

  • ½ cup breadcrumbs or crushed crackers
  • 1 tbsp melted butter

👩‍🍳 Instructions

Step 1: Prep the Asparagus

  1. Preheat oven to 190°C (375°F).
  2. Blanch asparagus in boiling salted water for 2–3 minutes until just tender-crisp.
  3. Drain and immediately place in cold water, then drain again.
  4. Arrange asparagus in a greased baking dish.

Step 2: Make the Cheese Sauce

  1. Melt butter in a saucepan over medium heat.
  2. Add garlic and sauté 30 seconds until fragrant.
  3. Whisk in flour and cook 1 minute.
  4. Gradually add warm milk (and cream), whisking until smooth.
  5. Simmer 3–4 minutes until thickened.
  6. Remove from heat and stir in shredded cheese, Parmesan, salt, pepper, and nutmeg.

Step 3: Assemble

  1. Pour cheese sauce evenly over asparagus.
  2. Sprinkle breadcrumbs mixed with melted butter on top (if using).

Step 4: Bake

  • Bake uncovered for 20–25 minutes, until bubbly and golden on top.

  • Perfect for holiday dinners or special occasions

  • Low-carb: Skip breadcrumbs.
  • Extra cheesy: Add blue cheese or fontina.
  • Lemon twist: Add 1 tsp lemon zest to sauce.
  • Air fryer: Bake at 180°C (350°F) for 10–12 minutes (small dish).
