  • ½ teaspoon chili flakes (optional)

  • ¼ teaspoon black pepper

  • Optional toppings (finely chopped):

    • Cooked chicken

    • Pepperoni or sausage

    • Capsicum

    • Onion

    • Olives

    • Sweet corn

For Brushing

  • 1 egg, beaten (or milk for egg-free option)


Step-by-Step Directions

Step 1: Preheat the Oven

Preheat the oven to 200°C (400°F).
Line a baking tray with parchment paper.


Step 2: Prepare the Puff Pastry

Lightly flour your work surface.
Roll out the puff pastry slightly to even the thickness.
Cut into small squares, about 5 × 5 cm.


Step 3: Add Filling

Place a small spoon of pizza sauce in the center of each square.
Add grated mozzarella and cheddar cheese.
Sprinkle oregano, black pepper, and chili flakes.
Add a small amount of desired toppings. Do not overfill.


Step 4: Shape the Bites

Fold each square into a pocket or bring the corners together and pinch to seal.
You can also leave them open for a mini pizza look.


Step 5: Brush and Bake

Place the bites on the prepared tray, leaving space between them.
Brush the tops lightly with beaten egg or milk.

Bake for 15–18 minutes or until puffed, golden, and crispy.


Step 6: Cool and Serve

Remove from oven and let rest for 3–5 minutes.
Serve warm.
