Ingredients

Chicken Salad

  • Cooked chicken – 2 cups, shredded or diced

  • Celery – 2 stalks, finely chopped

  • Red onion – ¼ cup, finely chopped

  • Green apple – ½, peeled and diced (optional for sweetness)

  • Mayonnaise – ½ cup

  • Greek yogurt – 2 tablespoons (optional, for creaminess)

  • Dijon mustard – 1 teaspoon

  • Lemon juice – 1 teaspoon

  • Salt – ½ teaspoon

  • Black pepper – ¼ teaspoon

  • Fresh parsley – 1 tablespoon, chopped

Assembly

  • Croissants – 4–6, preferably freshly baked

  • Lettuce leaves – optional

  • Sliced tomato – optional


Directions

Step 1: Prepare the Chicken Salad

  1. In a large bowl, combine shredded chicken, celery, red onion, and apple.

  2. In a small bowl, mix mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.

  3. Pour the dressing over the chicken mixture.

  4. Stir gently until everything is well coated.

  5. Add chopped parsley and mix lightly.


Step 2: Prepare the Croissants

  1. Slice croissants horizontally, without cutting all the way through.

  2. Optional: Toast lightly for extra crispiness.


Step 3: Assemble

  1. Line the bottom of each croissant with a lettuce leaf (optional).

  2. Spoon chicken salad generously into each croissant.

  3. Add sliced tomato if desired.

  4. Close the croissant and serve immediately.


Tips for Best Results

  • Use rotisserie or leftover chicken for convenience and flavor.

  • Chill chicken salad for 30 minutes before assembling for better flavor.

  • For added crunch, include toasted nuts or seeds.

  • Use buttery croissants for a richer taste.
