Ingredients

For the Roll Bites

  • White sandwich bread – 6 slices (crusts removed)

  • Unsalted butter – 2 tablespoons, melted

Cinnamon Filling

  • Unsalted butter – 2 tablespoons, softened

  • Brown sugar – ¼ cup

  • Ground cinnamon – 1½ teaspoons

  • Eggs – 2 large

  • Milk – ¼ cup

  • Vanilla extract – ½ teaspoon

  • Ground cinnamon – ¼ teaspoon

Optional Topping

  • Powdered sugar or maple syrup

Directions

Step 1: Prepare the Bread

  • Remove crusts from bread slices.

  • Flatten each slice gently with a rolling pin.

Step 2: Make the Cinnamon Filling

  • Mix softened butter, brown sugar, cinnamon, and vanilla until smooth.

Step 3: Fill and Roll

  • Spread a thin layer of cinnamon filling over each flattened bread slice.

  • Roll each slice tightly from one end to form a small log.

  • Brush lightly with melted butter to seal.

Step 4: Prepare the French Toast Mixture

  • In a shallow bowl, whisk eggs, milk, vanilla, and cinnamon until well combined.

Step 5: Dip the Roll Bites

  • Dip each roll-up quickly into the egg mixture to coat evenly.

  • Do not soak to avoid soggy bites.

Step 6: Cook

  • Heat a non-stick skillet or griddle over medium heat; lightly grease.

  • Cook roll bites seam-side down first.

  • Turn and cook all sides until golden brown, about 2–3 minutes per side.

Step 7: Optional Coating

  • Mix granulated sugar and cinnamon in a shallow bowl.

  • Roll warm bites in mixture if desired.

  • Drizzle with powdered sugar or maple syrup.

Tips for Best Results

  • Use soft bread for easy rolling.

  • Do not overfill or the filling will leak.

  • Medium heat ensures the inside cooks without burning outside.

  • Serve immediately for best texture.

  • Cream Cheese Version: Add a layer of cream cheese with the cinnamon filling.

  • Apple Cinnamon: Include finely chopped sautéed apples.

  • Chocolate Cinnamon: Add mini chocolate chips inside.
