Coconut chewies

Coconut Chewies are soft, chewy, and packed with coconut flavor. These delightful treats are perfect for snacks, lunchboxes, or a sweet bite with tea or coffee.


Ingredients (Makes 12–16 pieces)

  • 1 cup sweetened shredded coconut

  • ½ cup sweetened condensed milk

  • ¼ cup unsalted butter, melted

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Optional: ¼ cup chocolate chips or chopped nuts


Instructions

1. Prepare the Mixture

  1. In a medium bowl, combine shredded coconut, sweetened condensed milk, melted butter, vanilla extract, and a pinch of salt.

  2. Stir until all ingredients are well combined.

  3. Add chocolate chips or nuts if desired.


2. Shape the Chewies

  1. Line a small baking dish or tray with parchment paper.

  2. Spoon the mixture into the dish and press evenly to form a compact layer.

  3. Alternatively, shape into small bite-sized balls or squares.


3. Chill to Set

  • Refrigerate for 1–2 hours until firm.


4. Serve

  • Cut into squares or remove bite-sized pieces.

  • Serve chilled or at room temperature.


Tips for Perfect Coconut Chewies

  • Use fresh sweetened coconut for best flavor and texture.

  • Press firmly into the tray to ensure they hold together.

  • Store in an airtight container in the refrigerator for up to 1 week.

  • Add a drizzle of melted chocolate on top for extra indulgence.


Variations

  • Chocolate Coconut Chewies: Mix in 2 tablespoons cocoa powder or chocolate chips.

  • Nutty Chewies: Add chopped almonds, cashews, or pecans.

  • Tropical Twist: Mix in a few tablespoons of dried pineapple or mango.

  • Mini Chewies: Roll into small balls for easy, bite-sized treats.
