🧾 Ingredients

  • Boneless chicken breast – 250 g (½ lb)

  • Carrots – 2 medium, peeled and grated

  • Onion – 1 small, finely chopped

  • Garlic – 2 cloves, minced

  • Butter – 2 tablespoons

  • Cooking oil – 1 tablespoon

  • Cream cheese – 100 g (½ cup)

  • Fresh cream – ¼ cup

  • Black pepper – ½ teaspoon

  • Salt – to taste

  • Paprika or red chili powder – ¼ teaspoon (optional)

  • Dried oregano or mixed herbs – ½ teaspoon

  • Lemon juice – 1 teaspoon

  • Milk or chicken stock – 2–3 tablespoons (for blending)


👩‍🍳 Directions (Step-by-Step)

Step 1: Cook the Chicken

  1. Cut the chicken breast into small cubes.

  2. Boil in lightly salted water for 10–12 minutes until fully cooked.

  3. Drain and let it cool slightly.

  4. Shred the chicken finely using a fork or pulse once or twice in a food processor.


Step 2: Sauté the Vegetables

  1. Heat oil and butter together in a pan over medium heat.

  2. Add chopped onion and sauté for 2–3 minutes until soft and translucent.

  3. Add garlic and cook for 30 seconds until fragrant.

  4. Add grated carrots and cook for 5–6 minutes, stirring often, until soft and slightly sweet.


Step 3: Combine & Season

  1. Add shredded chicken to the pan.

  2. Season with salt, black pepper, paprika, and herbs.

  3. Cook for 2–3 minutes so flavors blend well.

  4. Turn off heat and allow mixture to cool slightly.


Step 4: Blend into a Creamy Spread

  1. Transfer mixture to a blender or food processor.

  2. Add cream cheese, fresh cream, lemon juice, and milk/stock.

  3. Blend until smooth and creamy.

    • For a chunkier spread, pulse lightly.

    • For extra smoothness, blend longer.


Step 5: Taste & Adjust

  • Taste and adjust salt, pepper, or lemon juice.

  • If too thick, add 1 tablespoon milk at a time and blend again.
