Creamy macaroni salad is a timeless side dish that brings comfort and flavor to any table. It combines tender macaroni, crisp vegetables, and a smooth, tangy dressing that makes every bite satisfying and refreshing.

Ingredients

For the Salad

  • 2 cups elbow macaroni (uncooked)

  • 1 cup mayonnaise

  • 2 tablespoons fresh cream (optional, for extra richness)

  • 1 tablespoon yellow mustard

  • 1 tablespoon vinegar or lemon juice

  • 1 teaspoon sugar

  • 1/2 teaspoon salt (adjust to taste)

  • 1/2 teaspoon black pepper

  • 1/2 cup finely chopped carrots

  • 1/2 cup finely chopped cucumber (seeds removed)

  • 1/4 cup finely chopped red onion

  • 1/4 cup sweet corn (boiled)

  • 2 tablespoons chopped fresh parsley or coriander


Step-by-Step Directions

Step 1: Cook the Macaroni

Bring a large pot of water to a boil. Add a teaspoon of salt to the water.

Add the elbow macaroni and cook according to the package instructions until al dente (tender but slightly firm). This usually takes about 7–9 minutes.

Do not overcook, as soft macaroni can make the salad mushy.

Once cooked, drain the macaroni and rinse under cold running water to stop the cooking process. Let it drain completely and cool.


Step 2: Prepare the Vegetables

While the macaroni is cooling, finely chop the carrots, cucumber, and red onion.

If using fresh corn, boil it for a few minutes until tender and allow it to cool.

Add the cooled macaroni to the bowl with the dressing.

Add the chopped vegetables and parsley.

Be careful not to mash the pasta while mixing.


Step 5: Chill Before Serving

Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving.

Chilling allows the flavors to blend together and enhances the taste.

Before serving, stir the salad gently. If it appears slightly dry, you can add a tablespoon of mayonnaise or a splash of milk to refresh the texture.
