A good creamy potato salad is all about tender potatoes, a rich dressing, and balanced flavor. This version is smooth, slightly tangy, and perfect for BBQs, dinners, or even as a chilled side with fried or grilled dishes.

Ingredients

For the Potatoes

  • 500g potatoes (boiled & cubed)
  • 1 tsp salt (for boiling)

For the Creamy Dressing

  • ½ cup mayonnaise
  • 2 tbsp yogurt (adds light tanginess)
  • 1 tsp mustard (optional but recommended)
  • 1 tbsp lemon juice or vinegar
  • ½ tsp black pepper
  • Salt to taste

Add-Ins (for texture & flavor)

  • 1 small onion (finely chopped)
  • 2 tbsp fresh coriander or parsley (chopped)
  • 1–2 boiled eggs (chopped, optional)
  • 1 small carrot (finely diced or grated)
  • 1–2 tbsp sweet corn (optional)

Step-by-Step Instructions

Step 1: Boil the Potatoes

  • Peel and cut potatoes into medium chunks
  • Boil in salted water until fork-tender (not mushy)
  • Drain and let them cool completely

Tip: Overcooked potatoes will turn the salad mushy.

Step 2: Prepare the Dressing

In a bowl, mix:

  • Mayonnaise
  • Yogurt
  • Mustard
  • Lemon juice
  • Salt & black pepper

Whisk until smooth and creamy.

Step 3: Combine Everything

  • Add cooled potatoes to a large bowl
  • Add onions, herbs, carrots, corn, and eggs
  • Pour the dressing over

Gently mix so potatoes stay intact and coated.

Step 4: Chill Before Serving

Refrigerate for 30–60 minutes.
This helps the flavors blend and improves taste.

Serving Suggestions

  • Serve chilled with BBQ, grilled chicken, or sandwiches
  • Perfect side for lunch or dinner
  • Great for picnics and gatherings

Pro Tips for Best Results

  • Use waxy potatoes for better shape (or all-purpose)
  • Always let potatoes cool before mixing
  • Don’t overload dressing—add gradually
  • Taste and adjust salt/lemon at the end

Flavor Variations

1. Garlic Creamy Potato Salad

Add 1 tsp garlic paste or roasted garlic

2. Tangy Pickle Version

Add chopped pickles or cucumber for crunch

3. Spicy Version

Add chili flakes or a little hot sauce

4. Light Version

Replace half mayo with more yogurt

Storage

  • Store in fridge for up to 2–3 days
  • Keep covered to maintain freshness
  • Stir before serving again

Final Thoughts

Creamy potato salad is simple, comforting, and incredibly versatile. Once you master the base recipe, you can adjust flavors to match any meal or mood.

If you want, I can also give you a restaurant-style Russian salad or a healthy no-mayo potato salad 👍
