Hamburger Steak with Gravy

Ingredients

For the Hamburger Steaks:

  • 1 lb (450 g) ground beef (80% lean recommended)

  • 1/4 cup breadcrumbs

  • 1/4 cup milk

  • 1 small onion, finely chopped

  • 1 large egg

  • 1 teaspoon Worcestershire sauce

  • 1 teaspoon garlic powder

  • Salt and black pepper to taste

  • 1–2 tablespoons vegetable oil (for frying)

For the Gravy:

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 2 cups beef broth

  • 1 teaspoon Worcestershire sauce

  • Salt and black pepper to taste

  • Optional: sautéed mushrooms or onions


Instructions

Step 1: Prepare the Hamburger Steaks

  1. In a large bowl, combine breadcrumbs and milk. Let sit for 2–3 minutes to soak.

  2. Add ground beef, chopped onion, egg, Worcestershire sauce, garlic powder, salt, and pepper.

  3. Mix gently until just combined—avoid overmixing to keep the meat tender.

  4. Shape the mixture into 4–6 oval patties.


Step 2: Cook the Patties

  1. Heat oil in a large skillet over medium heat.

  2. Add the patties and cook for 4–5 minutes per side, or until browned and cooked through.

  3. Remove patties from the skillet and set aside.


Step 3: Make the Gravy

  1. In the same skillet, melt butter over medium heat.

  2. Add flour and whisk continuously for 1–2 minutes to make a roux.

  3. Gradually whisk in beef broth and Worcestershire sauce.

  4. Bring to a simmer, stirring constantly until gravy thickens (about 3–5 minutes).

  5. Season with salt and pepper to taste.

  6. Optional: Add sautéed mushrooms or onions for extra flavor.


Step 4: Combine and Serve

  1. Return the hamburger steaks to the skillet with the gravy.

  2. Spoon gravy over the patties and let simmer for 2–3 minutes to reheat and soak in the flavors.

  3. Serve hot with mashed potatoes, rice, or steamed vegetables.


Tips for Juicy Hamburger Steaks

  • Don’t overwork the meat when mixing; it keeps the patties tender.

  • Browning the patties well adds depth of flavor to the gravy.

  • You can make the gravy ahead of time and just reheat with the patties for convenience.

  • For extra richness, stir a tablespoon of sour cream or heavy cream into the gravy before serving.
