For the Chicken Marinade

  • 500 g boneless chicken thighs or breasts (cut into medium pieces)

  • 1 cup buttermilk (or milk + 1 tbsp vinegar)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp chili powder (optional)


For the Crispy Coating

  • 1½ cups all-purpose flour

  • ½ cup cornflour (cornstarch)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • ½ tsp baking powder

  • ½ tsp garlic powder


For Frying

  • Oil (canola or vegetable oil)


For the Honey Butter Sauce

  • 4 tbsp unsalted butter

  • ⅓ cup honey

  • 1 tbsp soy sauce

  • 1 tbsp hot sauce or chili sauce (optional)

  • ½ tsp garlic powder

  • ½ tsp red chili flakes (optional)

Step 1: Marinate the Chicken

  1. In a bowl, mix buttermilk, salt, black pepper, garlic powder, paprika, and chili powder.

  2. Add chicken pieces and coat well.

  3. Cover and refrigerate for at least 30 minutes (up to 4 hours for best flavor).

Step 2: Prepare the Crispy Coating

  1. In a separate bowl, combine flour, cornflour, salt, pepper, paprika, baking powder, and garlic powder.

  1. Remove chicken from marinade (do not wipe off liquid).

  2. Dip each piece into the flour mixture.

  1. Heat oil in a deep pan to 170–180°C (350°F).

  2. Fry chicken in batches (do not overcrowd).

  4. Remove and place on a wire rack or paper towel.
