🧾 Ingredients

For the Taco Filling:

  • Ground beef or chicken – 500 g (1 lb)

  • Onion – 1 small, finely chopped

  • Garlic – 2 cloves, minced

  • Taco seasoning – 2 tablespoons

  • Salt – to taste

  • Black pepper – ½ teaspoon

  • Paprika or chili powder – 1 teaspoon

  • Tomato paste or salsa – ½ cup

  • Corn or black beans – ½ cup

  • Bell peppers – ½ cup, diced (optional)

Cheese:

  • Mozzarella – 1½ cups, shredded

  • Cheddar – 1 cup, shredded

For the Taco Pockets:

  • Flour tortillas – 6–8 medium

  • Butter or oil – for brushing

Optional Toppings Inside:

  • Jalapeños

  • Olives

  • Cooked rice

  • Sour cream (small amount)

Step 1: Cook the Filling

  1. Heat a pan over medium heat with 1 tablespoon oil.

  2. Add onion and sauté 2–3 minutes until soft.

  3. Add garlic and cook 30 seconds.

  4. Add ground meat and cook until browned.

  5. Drain excess fat if needed.

  6. Add taco seasoning, salt, pepper, paprika, and tomato paste/salsa.

  7. Stir in corn/beans and bell peppers.

  8. Simmer 5 minutes until thick.

  9. Remove from heat and cool slightly.


Step 2: Assemble the Pocket Tacos

  1. Lay tortillas flat.

  2. Sprinkle cheese in the center.

  3. Add cooked taco filling.

  4. Add more cheese on top.

  5. Fold tortilla like a pocket (half-moon or envelope style).

  6. Press edges gently.


Step 3: Cook the Pockets

Option A: Pan-Fry (Crispiest)

  1. Heat a non-stick pan over medium.

  2. Brush pockets lightly with butter or oil.

  3. Cook 2–3 minutes per side until golden and crispy.

Option B: Oven-Baked

  1. Preheat oven to 190°C (375°F).

  2. Place pockets on lined tray.

  3. Brush with butter.

  4. Bake 12–15 minutes, flipping once.

Option C: Air Fryer

  • Cook at 180°C for 8–10 minutes, flipping halfway.
