Most Delicious Muffin Recipe

These muffins are soft, tender, and packed with flavor. Perfect for breakfast, brunch, or a snack, this recipe works for fruit, chocolate, or nut variations.

Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

Wet Ingredients:

  • 1 cup buttermilk (or milk + 1 tsp lemon juice)

  • ½ cup unsalted butter, melted

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

Add-ins (Optional):

  • 1 cup blueberries, raspberries, or chopped strawberries

  • ½ cup chocolate chips

  • ½ cup chopped nuts (walnuts, pecans, or almonds)

Directions

Step 1: Preheat and Prepare

  1. Preheat oven to 375°F (190°C).

  2. Line a 12-cup muffin tin with paper liners or grease with butter.

Step 2: Mix Dry Ingredients

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Step 3: Mix Wet Ingredients

  1. In another bowl, whisk buttermilk, melted butter, eggs, and vanilla extract until combined.

Step 4: Combine Wet and Dry Ingredients

  1. Pour wet ingredients into dry ingredients.

  2. Stir gently until just combined. Do not overmix; a few lumps are okay.

Step 5: Add Mix-ins

  1. Gently fold in your choice of fruit, chocolate chips, or nuts.

Step 6: Fill Muffin Cups

  1. Divide batter evenly among muffin cups, filling each about ¾ full.

Step 7: Bake

  1. Bake for 18–22 minutes, or until a toothpick inserted comes out clean.

  2. Cool in the pan for 5 minutes, then transfer to a wire rack.

Step 8: Serve

  • Serve warm or at room temperature.

  • Store in an airtight container for up to 3 days, or freeze for longer storage.

Tips for Perfect Muffins

  • Do not overmix: Overmixing leads to dense muffins.

  • Fresh ingredients: Fresh fruit or high-quality chocolate enhances flavor.

  • Room temperature eggs and butter: Helps batter combine better.

  • Optional topping: Sprinkle coarse sugar or streusel on top before baking for extra crunch.

Variations

  • Banana Chocolate Chip Muffins: Replace ½ cup flour with ½ cup mashed ripe banana.

  • Apple Cinnamon Muffins: Fold in 1 cup finely chopped apples and 1 tsp cinnamon.

  • Lemon Poppy Seed Muffins: Add 2 tsp poppy seeds and 1 tsp lemon zest.
