👩‍🍳 Directions

Step 1: Brown the Beef

  1. Heat oil in a large pot or Dutch oven over medium-high heat.
  2. Add beef in batches and brown on all sides. Remove and set aside.

Step 2: Sauté Aromatics

  1. Add onion, garlic, carrots, and celery to the pot.
  2. Cook 5–7 minutes until softened and fragrant.

Step 3: Make the Stew Base

  1. Sprinkle flour over vegetables and stir for 1–2 minutes to remove raw taste.
  2. Gradually add beef broth, stirring to prevent lumps.
  3. Return browned beef to the pot.

Step 4: Add Seasoning & Simmer

  • Add potatoes, salt, pepper, thyme, paprika, and bay leaves.
  • Bring to a boil, then reduce heat to low.
  • Cover and simmer 1½–2 hours, until beef and vegetables are tender.

Step 5: Add Creaminess

  • Stir in milk or cream gradually.
  • Simmer an additional 10–15 minutes until slightly thickened.
  • Adjust salt and pepper to taste.

Step 6: Finish & Serve

  • Remove bay leaves.
  • Add frozen peas if using; cook 2–3 minutes.
  • Serve hot with crusty bread or over mashed potatoes.
