Rotel Cream Cheese Sausage Balls

🧾 Ingredients

  • 1 lb (450 g) pork sausage (hot or mild, your choice)

  • 8 oz (225 g) cream cheese, softened

  • 1 can (10 oz) Rotel diced tomatoes & green chilies, well drained

  • 2 cups Bisquick (or any baking mix)

  • 1½ cups shredded cheddar cheese

  • ½ tsp garlic powder (optional)

  • ½ tsp onion powder (optional)

  • ¼ tsp black pepper (optional)


👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C)
    Line a baking sheet with parchment paper or lightly grease it.

  2. Drain Rotel completely
    This step is very important to avoid soggy sausage balls.

  3. Mix ingredients
    In a large bowl, combine:

    • Sausage

    • Softened cream cheese

    • Drained Rotel

    • Bisquick

    • Cheddar cheese

    • Optional seasonings

    Mix until fully combined. (Hands work best!)

  4. Form balls
    Roll mixture into 1–1½ inch balls and place them on the baking sheet, leaving some space between each.

  5. Bake
    Bake for 18–22 minutes, or until golden brown and cooked through.

  6. Serve hot
    Let rest for 5 minutes before serving.

  • Make ahead: Freeze raw balls and bake when needed

  • Air fryer: Cook at 360°F (182°C) for 10–12 minutes

  • Low-carb option: Replace Bisquick with almond flour + baking powder
