White Chocolate Strawberry Cheesecake

This White Chocolate Strawberry Cheesecake is a luxurious dessert combining a buttery graham cracker crust, creamy white chocolate cheesecake filling, and a fresh strawberry topping. Perfect for special occasions, celebrations, or anytime you want a show-stopping dessert.


Ingredients (Serves 8–10)

For the Crust

  • 1½ cups graham cracker crumbs

  • 3 tablespoons granulated sugar

  • 6 tablespoons unsalted butter, melted

For the White Chocolate Cheesecake Filling

  • 16 oz (450 g) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 6 oz (170 g) white chocolate, melted and slightly cooled

  • ½ cup sour cream or heavy cream

For the Strawberry Topping

  • 1 cup fresh strawberries, hulled and sliced

  • 2 tablespoons sugar

  • 1 teaspoon lemon juice

  • Optional: 1 teaspoon cornstarch mixed with 1 tablespoon water (for thicker topping)


Instructions

1. Prepare the Crust

  1. Preheat oven to 350°F (175°C).

  2. Mix graham cracker crumbs, sugar, and melted butter until combined.

  3. Press the mixture firmly into the bottom of a 9-inch springform pan.

  4. Bake for 8–10 minutes, then let cool.


2. Prepare the Cheesecake Filling

  1. Beat cream cheese and sugar until smooth.

  2. Add eggs one at a time, mixing well after each addition.

  3. Stir in vanilla extract and melted white chocolate.

  4. Fold in sour cream or heavy cream until creamy and smooth.


3. Bake the Cheesecake

  1. Pour filling over the cooled crust.

  2. Bake at 325°F (160°C) for 40–50 minutes, or until the center is almost set (it may slightly jiggle).

  3. Turn off the oven and leave cheesecake inside with the door slightly open for 10 minutes to prevent cracking.

  4. Cool to room temperature, then refrigerate for 4 hours or overnight.


4. Prepare Strawberry Topping

  1. In a small saucepan, combine sliced strawberries, sugar, and lemon juice.

  2. Cook over medium heat for 5–7 minutes until strawberries release juices.

  3. Optional: Add cornstarch slurry and simmer for 1–2 minutes until slightly thickened.

  4. Let cool to room temperature.


5. Assemble and Serve

  • Spread the cooled strawberry topping evenly over the chilled cheesecake.

  • Garnish with fresh strawberries or white chocolate shavings.

  • Slice with a sharp knife and serve chilled.


Tips for Perfect White Chocolate Strawberry Cheesecake

  • Use room-temperature cream cheese for smooth filling.

  • Melt white chocolate gently over a double boiler or in short bursts in the microwave.

  • Avoid overbaking to maintain creamy texture.

  • Use fresh, ripe strawberries for the best flavor.
